The Pistachio Cream Cold Brew is one of my favorite ways to order cold brew at Starbucks. It lands in that in-between stretch of the year after pumpkin spice and peppermint season wind down, but before the bright, fruity summer drinks take over. It’s sweet and seasonal without tasting like liquid dessert.
I filmed the video review below during the drink’s spring 2025 run. The Pistachio Cream Cold Brew came back again when Starbucks rolled out its 2026 winter menu on Jan. 6, 2026, alongside the Pistachio Latte and a new Pistachio Cortado.
What’s in the Pistachio Cream Cold Brew
The base is Starbucks cold brew, not iced coffee. Iced coffee is brewed hot and then chilled. Cold brew is never heated at all: Starbucks steeps the grounds in cool water for about 20 hours, which pulls out a smoother, less bitter flavor. Starbucks’ cold brew also packs more caffeine than its regular iced coffee.
In the standard recipe, the cold brew is lightly sweetened with vanilla syrup and poured over ice. On top sits a thick layer of pistachio cream cold foam, finished with a sprinkle of salted brown-buttery topping.
How it tastes
The star is the pistachio cream. It’s essentially a cold foam, but it has an almost Cool Whip-like consistency that sits on top of the drink instead of sinking in. It’s sweet, but mildly so.
As you sip, the cold brew filters up through the foam, so every mouthful gets a little of both. The pistachio flavor reminds me of pistachio gelato. It’s subtle rather than intense, much gentler than the hazelnut and caramel flavors Starbucks often leans on, and the foam has a faint green tinge that fits the theme.
Even with the vanilla in the base, this is not a very sweet drink overall. You get a nice little kick of sweetness from the foam, but it never gets cloying the way a Refresher or a Frappuccino can.
Skip the straw
My one strong recommendation: drink it without a straw. A straw pulls coffee straight from the bottom of the cup and leaves the pistachio foam stranded on top, which ruins the whole experience. Starbucks usually serves it in a wide-mouth cup, so just sip from the lid and let the coffee come through the cream.
Calories, sugar and caffeine
Compared with a Frappuccino or a latte loaded with syrup and cream, this is a relatively light drink. Nutrition trackers that use Starbucks’ published data list a grande Pistachio Cream Cold Brew at about 250 calories and 32 grams of sugar, with roughly 185 milligrams of caffeine. Check the Starbucks app for the current numbers for your size and any customizations.
The verdict
If you like cold brew but want something a little sweeter and more interesting than drinking it black, the Pistachio Cream Cold Brew is a fantastic choice. It’s smooth, seasonal and restrained, with a pistachio flavor that adds interest without overwhelming the coffee. Just leave the straw behind.
Availability: The Pistachio Cream Cold Brew is a seasonal drink that typically appears on Starbucks’ winter and spring menus. Check the Starbucks app to see whether it’s available at your local store.
